Our Go-To Blueberry Muffins!

Is a blueberry muffin healthy?  While the obvious answer is no a traditional blueberry muffin is definitely not healthy, we can however make a few simple modifications to make them quite a bit healthier.

And sure I have a not-so-healthy sugar packed blueberry muffin we love and enjoy sometimes but this recipe below is something I feel better about serving my family more often.  These have actually been one of our go-to breakfasts before school for quite some time.

It's something we can take on the go, they are such a tasty morning treat, and it's so convenient that they can be made ahead.

For the kids we usually just pair them with milk and a hard boiled egg for another make ahead option (we aren't morning people and appreciate those few extra minutes of sleep). And if you like them warm you can heat in the microwave briefly.

These blueberry muffins freeze well for several months (though you'll probably have them polished off much sooner), and you don't even need a mixer to make them!

They have a soft and moist crumb, plenty of blueberry flavor, and they are sweetened just enough.

If you are looking for a smarter way to enjoy a muffin without all the refined sugars and unhealthy fats I highly recommend trying these. You may likely agree muffins can still be delicious without all that extra stuff.

Easy Cake-Style Homemade Donuts

Bite size donuts (AKA Donut Holes) with a lightly crisp and golden brown, sugar coated exterior, and a soft and fluffy, tender interior. Just like an old fashioned cake donut but ready in a flash!

I made this easy donut recipe because who can resist a fresh donut? But how many of us actually want to put in all the typical effort of a homemade donut?

I've seen donut holes made with a store-bought biscuit dough but I'm all about the freshly made dough.

It's a hundred times better and unbelievably easy. No mixer required, no kneading, rolling or cutting. Just a quick stir and shaping and they're ready for frying!

Easy Apple Fritters Recipe

Oh all the ways to make an apple fritter! There's the method where apples are cut into whole slices and coated in batter, and then there's the type (like so) where apples are cut into small cubes and tossed with batter.

And you'll also find more complex versions where a heartier dough is folded over cubed apples and then cut into strips and cubes, and then pressed and formed into fritters from there.

Sometimes apples are pre-cooked and softened while other times they're added in raw and crisp.

Frequently they're shaped into flatter patties while also common they're formed into misshapen rounds. You'll also find they come in various sizes.

Typically you'll find apple fritters are fried but some recipes call for baking in the oven instead.

Most apple fritter recipes use yeast or baking powder for leavening (which helps the batter rise). The yeast versions require extra rising periods and are they have a chewier texture, while the baking powder versions have a softer more cake-like texture (think old fashioned cake donuts) and the batter is fried right after preparing (no lengthy resting times).

Here we go the quick baking powder route and fry up in small portions for a quick and easy recipe. They end up perfectly spiced and sweet, melt-in-your-mouth tender, and with apple flavor in every bite!

More often than not when I making donuts I go for baked donuts vs. fried.

Less mess, still such a delicious flavor, and a bit less fat since we skip the deep frying. Oh and none of that oily smell in the house, just a sweet coconuty scent!

Which Would You Choose Raw Coconut or Toasted?

I couldn't choose which I liked better, the raw coconut or the toasted coconut so I did half of each. But I will say the finely shredded coconut is definitely what you want here.

That fine texture won't detract from the soft fluffy texture of the donuts. You can find the fine coconut in the bulk bins of some grocery stores, or sometimes the baking section or on Amazon.

And if you don't own a donut pan you can also find those on Amazon (or in stores like Michaels or kitchen supply stores).

I recommend buying two though. I started with one back in the day and that didn't last long. Baking 6 at a time was kind of annoying when your recipe makes 12 - 18.

Sign me up! These Whole Wheat Honey Banana Muffins are so good people won't even notice they're healthier, my kids had no idea! Instead of being made with plain white flour they are made with healthier white whole wheat flour, then instead of being made with granulated sugar they are made with honey and about half the amount in comparison to the typical amount of sugar that's normally added.

Then another healthier swap is the coconut oil in place of the butter. I'm not normally someone that's into healthier baked goods but when they're this good then I'm all in!

Apple Muffins with Snickerdoodle Flavor!

Isn't it crazy how quickly fall just all of the sudden seems to hit? It seems like the feeling of fall and everything that comes with it just happens overnight. Here went from hot summer days to cool breezy autumn days.

No complaints from me though because I absolutely love fall - mostly because the beautiful leaves of all of the fall treats like these delicious Apple Snickerdoodle Muffins!
